Our budget is 18 percent and we have not made it yet. Our cost almost every month is 24 or 25 percent. I have almost every control in place but I still cannot get it down.

Our budget is 20%. We are always pretty close and finish both above and below sometimes. We really just try to keep a close eye on every part of our liquor process all the way from ordering and requisitioning to selling.

We actually made our budget the last 4 months! We started doing a perpetual inventory and then doing an actual inventory at the end of every shift. It takes a lot of extra time since we used to only do a monthly inventory but it helped us get below budget.

The best advice that I know of controlling liquor cost is to use a measure pour system. Our bottles have a special spout on them that pour exactly 1 oz of alcohol each time.

My GM won’t spend the money I need to get our costs down! I’m trying to buy some new supplies and get some mystery shoppign done but I can’t get through to him. HELP!
